I understand you can't spend money on frivolous stuff, but you should
consider general interest Tiger books such as the 'gold portfolio'

item=2424019532, make sure you copy ALL of the URL to your browser to
see it) as part of the restoration itself. Just include it with the car
when it's auctioned off.
If it is a charitable organization, would donations be tax deductible?
As a Canadian resident it wouldn't apply to me, but if you're scrounging
for parts you might find people to be more willing to part with their
stuff if they know it's going to a good cause, and if they can get a tax
receipt for the nominal value of the part.
Also, if you put up a list of parts you need, you might get responses
from people with extra parts in their garage (or from their spouses ;)
).
