Skip,

It does not know. A thermos has an inner vessel, a non-thermal conductive layer 
and an outer shell. The middle non-conductive layer (could just be a sealed air 
gap) reduces the amount of thermal energy exchanged helping to keep the inner 
chamber at a constant temperature.
