Lazy way out?

I am going to have a machine shop remove and install
valve guides, and cut and install valve seats. As I
will have this at the shop, I'm thinking this would be
the time to shave the head. I'll be putting in new
pistons with the same height and same rods. My
question; is there a rule of thumb or other simple
calculation that will determine a "safe" amount to
shave the head without grokking Vizard or relying on a
chevy raised machinist? The head isn't warped - I'm
just looking for a slight increase in compression.
Head is a 73 smog head.

As I am really limited to the quantity and quality of
machine shops should I look at sending the head to an
LBC specialist?
