Indeed, and I have figured it out that I need a third, which I also

The block is cooled seperately by the big hoses up front, but
this connection seems to be used to "dump" water from the
rear engine area. Perhaps there is a strong pull there
that helps heater flow?
Ok, so based on your email and some serious thought I think
I have it figured out.
Here's the picture I took before I took it apart, and I'm
putting it back almost the same:

I didn't realize until last night but the ZS manifold also
has a built in tee, it's just a different geometry than
the SU one so it didn't show as obviously.
The hose flow seems to be:
- Manifold outlet TOP connection goes into water switch. This
is the END connection on a stock SU, in the pic it's missing.
- Manifold bottom connection goes to under-manifold-pipe SIDE
connection. In the pic this one is missing too but the pipe
is still there and aimed roughly at the camera.
- Under-pipe END connection goes to heater top entry.
- Heater bottom entry goes to the switch's other outlet, but
it does this through a Tee fitting.
- The tee fitting branches off a 3/4 inch pipe that goes
into the block fitting.
Perhaps on your car the block fitting is blocked off and
serves as a drain only? It's basically straight under the
rear-most exhaust port, it's hooked up in the picture.
