How 'bout two cars? Say an early Volvo sedan with dual SUs and a manual
transmission as the daily driver to start off, and a Spridget 'project' as
something to learn care/repair/maintenance.
By the time the Spridget is ready to go she'll have plenty of practice
with the Volvo (and you'll have watched how she drives as she gets used to
it ;-) ).
The old Volvo B-18 (1800cc) 4-cyl with dual SUs is decidedly British in
character, and there's at least one company with some serious suspension
parts for them. (The '71s, with fuel injection, are also one of THE cars
to beat in SCCA's ITB class road racing.) The 142s and later also have
4-wheel-disc brakes standard.
Put a set of good shocks and sway bars on it to make it handle better/
snappier/safer. Maybe some lowering springs and wider wheels if she takes
a liking to it.
With a trailer hitch, the two of you could flat-tow the Spridget to some
autocrosses for practice in driving it hard before it's actually ready for
the road.

been running hot-rodded 142s for years and now has his own serious shop.)
