Hi, Danny!
The seat bottom foam just sits on the webbing, and can be removed when the
C-clips holding the seat bottom upholstery to the frame are removed.   The
upholstery on the Midget seats is particularly easy to replace.  I did it
all without any tools at all, or any prior experience.  The webbing can be
a little difficult to stretch, but it can be done by gripping the hooks
with a pair of pliers and bracing your feet against the frame.
Unless your seat back adjusting mechanism and seat tracks are frozen from
corrosion like mine were, it is pretty easy to remove the seats to replace
the carpeting whenever you feel like doing so.  I bought a complete
interior kit from Victoria British, which included all carpeting, seat
upholstery, and interior panels.  It looks great and was very easy to
install.
The setscrew for the mirror screws into the mirror base, and butts up under
the beveled edge of the piece inside.
I don't know about the dash overlay.
There should be one rectangular hood buffer on each fender about where the
prop rod is, and a round buffer on each side of the hood at the front.
