To quote the Rimmers catalogue:
"Initially the [DOT5] brake fluid remains purple, then after a while it
changes to yellow. The colour change is quite normal and does not affect
the performance of the fluid... SBF is non-toxic, virtually inert, and is
environmentally friendly. All this means that...you don't have to drain the
system."
So, I wouldn't let the colour change worry you, nor would I consider it
necessary to replace the fluid on a regular basis.
