I noticed this, too, when I replaced my carpets last year (I used the
moulded carpets from Newton Commercial, btw - and was very impressed with
them). But I thought the price was extortionate.
However, I found some sound-deadening material at a car show, and used that
instead. It was intended to be used behind the firewall, so it was a
little thick for under-the-carpet, but I managed to get it to fit really
well with careful use of a knife.
It was only when I removed my old carpet, though, that I found that there
was already sound deadening under at least part of it. Since the stuff
that came out looked more than a little tired, I replaced it with this
stuff that I found, and I did notice a small reduction in noise.
I don't know whether this reduction was due to the sound deading I used
being "fresher" than the old stuff, thicker than the old stuff, covering
more of the floor than the old stuff, or a combination of all of them, and
I've never run my car without any deadening, so I can't say how much
difference it would really make, but it certainly makes a small difference.
Having said that, if I were to do it all again, I probably wouldn't bother
with the deadening. The gains really don't seem to be worth the effort.

I noticed that they sell a underfelt (aka "sound deadening") kit
for Spits. This is the first time I have seen such a thing offered
by anyone....
If anyone has actually bought one, I would love to hear about it!
