Greg, only reason to have the big stud or have a smaller one raised is for the
thicker underlay/felt so that the carpet attaches without cutting too much felt
away underneath or having to really force fit it. My kit came with a thick felt
for the two sections in the footwells and since I have the other studs left it
makes sense to use them and I'll probably add some small washer or otherwise to
build up the height. I'll see what I can find at the hardware stores at the
weekend locally.

My experience is that the carpet snaps are the same size as the convertible
top snaps and can be interchanged. Most hardware stores will carry a kit
of snaps for under $5. Of course, you'll have to devise some sort of
pedestal to raise the floor snap, if that feature is important to you. I just
attached my snaps flat to the floor and never noticed any difference. But
then I carpeted my car with house scraps, so YMMV...
