Well, everybody- thanks for saving me a lot of frustration. However, that's
not quite the answer I was hoping for ;-(.
If I now understand correctly, I probably won't be able to use the original
steering column, as I had hoped, with the MustangII rack'n'pinion going into
the new chassis. If it's all one piece, there won't be any way to hook up a
linkage to the old column without some pretty major fabrication work.
The bad news: Looks like I'll have to buy a new steering column.
The good news: as difficult as the old column may be to get out, it appears
I have no reason to care about it, and as a last resort easy removal may be
obtained with the assistance of a cutting torch, or sawzall.
If the column comes out without too much difficulty tomorrow; my rolling
chassis offer may now also include a steering box/column ;-)

How does the stock (3 on-the-column originally, I think) steering column
separate from the old steering box on the frame? Do I just yank it apart?
If I had to guess, I'd guess it comes apart at the arrow in this pic:
