I don't really think it matters which way the gasket goes.  However, the non
shiney part will probably stick to its component. If you ever have to take the
manifold off in Glad Valley, South Dakota, you may prefer it to stick to the
head rather than the manifold so you could reuse it.

FWIW studs are used for several reasons.  One is that a steel bolt turned into
old cast iron technology under high tension can gall the threads in the cast
iron.  This makes the fastener difficult to remove and also can give incorrect
torque readings.  These old cast iron threads in the block and steel bolts are
also more likely to stip or pull out when used with higher tension applications.
