Matt,
Rebuilding carbs (along with starters, generators, and alternators) was my
summer job this year...
We routinely dipped the carb bodies in dip stripper (pretty caustic stuff)
after removing all the plastic and rubber, and making sure the rebuild kit
included the new pieces before continuing. The stripper does not hurt the
brass, and after a little polishing with a brass brush, the visible brass
allowed a nice patina (necessary for selling to a customer "Geeze, that's a
nice rebuild, all the brass is polished!") Remember to only rebuild one carb
at a time, and if you do get confused and have to disassemble the other to
check something, to keep the parts separate!
The most popular rebuild kits come with extra gaskets and such to allow for
the different setups on different models of carbs and cars...
Don't rush things, and don't force things, and you'll do great!
Good luck!

truly...a nice perk for working at a British Parts Store!)
