It wouldn't hurt to heat the thermostat on the stove in a sauce pan with a meat
thermometer to make sure it isn't lying to you. It should be completely open a 
165
degrees.

Although straight water has somewhat better cooling properties than an 
antifreeze
mixture, it still boils over at 212 degrees even Texas water. So don't be
surprised if the motor pukes up its water if you're running hot. The good news 
is
that the effluent won't kill any cats.

Lot's of things will make the motor run too hot. One of the weirdest I found 
was a
water pump impeller made of some sort of plastic that wore down to a nub before 
I
figured that out. Check the usual suspects first.
