Hi Ira, for what it is worth this is how I tackle it.
I make up a shim pack that allows me to mount the striker in the correct
position and penetrated as far as possible into the wedge of the door
latch.
I use that set up to adjust the door gaps.
I then remove the striker and position the post cover plate so I can
transfer the hole positions for the striker onto the plate, cut the holes
then mount the plate with spacers between the plate and the door post.
I believe that most cars had a striker shaped spacer between the post cover
plate and the post which is used to position the striker well into the
wedge of the door latch.
