I had a bonnet strap made to replace the one that came with my car. I
don't know anything about the grades of leather but the person who made it
used
a relatively soft hide which always flaps annoyingly at speed and
stretches when it gets wet. I would talk to a saddlery and explain the
application--no doubt there are different grades/thicknesses of leather
better suited
to this use.
