Metal towards the manifolds because it won't stick to the manifold
which allows you to pull them off/seperate the intake from exhaust w/o
destroying the gasket.
Also, the metal surface helps prevent leakage as the surface will
maintain a flat profile with the low torque setting for the manifolds.
