I'll try a little of the octane booster, for the ping.
I doubt that it is carbon deposits, since it has only been about max 150 miles
since the engine was totally rebuilt, -with new pistons, valves, etc. --And
the ping does only occur under heavy load. -And oddly enough, absolutely no
run on......
I'll have another look at the choke cables, -but I think that they are set as
tight as they will go, without preventing the choke from being able to fully
close. --But I'll double-check.

Make sure all of the slack is taken out of your choke linkages... make
sure that when you pull the choke, the levers should start moving
right away.
It sounds to me you just don't have enough choke.
By the way if you are getting ping, use some Bardahl Octane boost with
each fill up. Better to run with factory timing spec than futz around
with changing it to suit modern gas. I am suprised to hear about the
ping with 93 oct... running-on definitley, but ping? sounds like
carbon deposits on the piston tops and valves to me... maybe some
marvel mystery oil in the tank for a few fill-ups might be a good
idea.
