This concept can get sticky (no pun intended). On the big Boeings we are
concerned about the generator Constant Speed Drive units, so we do a couple
of things. We measure both the CSD oil inlet temperature and the outlet
temperature. The inlet temperature tells us how the oil cooler is doing and
the rise in temp through the unit tells us how hard the unit is working
(kind of an early warning system).

This concept could be applied to a race car, I suppose, if you had time to
look at the gauges that closely whilst blasting around the track.

Mr. Kastner is probably right. Oil cooler outlet temp is going to be a good
indication of how things are going. However any rise in oil temperature
wherever you measure it could be an indication of impending mechanical
failure, clogged or damaged oil cooler, etc. A gross measurement of the
temperature in the pan will probably suffice, but you can fine tune your
philosophy as you see fit.
