Usually a bouncing speedo or tach is caused by a cable that has a kink or
needs lubrication as it's not rotating smoothly in the sleeve.

There is a voltage gauge under the steering column for the instruments which
regulates some of the gauges like the temp and fuel gauge. It could also be
that the senders are bad.

BTW, w/o the right angle drive you may be kinking the line. Cables don't
like sharp bends.
