rear axle bearings and shimming

Well im still slowly plodding thru the restoration, currently working on
the diff. Ive got new axle bearings, but ive forgotten if the sealed side
of the bearing faces to the center or outwards? Also does anyone have any
tips for working out the number of shims needed to set the endplay on the
axles? Thanks all,
