I'm going to make the assumption that your steering setup is similar to
mine. On my car these ball joins screw onto the ends of the tie rods so
I carefully count the number of exposed threads on each side before
removing them. When either replacing or reinstall them, I leave the
same number of threads exposed on each side so that I'll end up with
about the same toe-in. This should also leave your wheels about as
closely centered as they were with the old ball joints.
Check the team.net archives for toe-in adjustment procedures. I have
several stashed away somewhere on my disk, but not sure where. If you
can't find anything on team.net, let me know and I'll forward what I
have, if I can find it.
