Ray,
        If you're using a factory 1275 cam, I have a hard time believing 
that the duration is sufficient to cause a lot of 'hunting' of the carbs 
at idle.  It sounds simply like your interconnecting throttle linkage is 
maladjusted, or you've a vaccuum leak.  There is the offhand chance that the 
throttle plates were installed with the beveled edges facing the wrong 
direction, but I don't really know how much of an effect this would have.
        I really enjoyed the wide-band improvement of my 4-cyl spit after 
I went one size bigger on the SU's, and I bet you'd find the same 
result.  The only problem I had was that I never got the needle size / 
jet adjustment setting just right.  You may have to do a good amount of 
fiddling to get a different carb setup to supply the expected air/fuel 
ratio throughout the rpm and load range.  In this respect, it's always 
amazed me that people expect a simple spring/mass/damper/pneumatic 
carburettor system to accurately meet the non-linear mixture needs of an 
engine.  I don't yet have however a simple, bolt-on, self mapping 
electronic fuel injection system to sell you.
