Here's the cheapo, but stable and quick set up:

Ingredients:
1  Tripod  (get one with three legs)
4  6 foot long Ratchet ties with hooks each end. I have some from
Menards that are made from 1/8" thick cord that doesn't stretch.

Throw all ingredients along with yourself into the back seat.  Set
tripod with two legs on the rear floor, and one shorter leg on the rear
seat.  
Tie down #1:  Hook to drivers seat track on floor, up around neck of
tripod, back down to passenger seat track. (Resists acceleration forces)
Tie down #2:  Hook inside trunk, run through fold down seats up to neck
of tripod.  (Resists braking forces)
Tie down #3:  Hook from coat hook on left side to tripod neck. (Right
turn forces)
Tie down #4:  Opposite for left turning forces.

Tighten all tie down cords until they ring G flat when plucked.  Mount
camera, stir shifter and enjoy home movies!
